Before I begin, let me tell you a story that will blow your mind. My first ever job was working as a Sales & Marketing Coordinator for a Hotel chain. My Director once told me a story that I have to share, which I’m sure she doesn’t mind.
Part of being in the Hotel industry is the perks of free travel, and she was once assigned to go to Japan. The first evening, she popped down to the restaurant, and they had sushi platters, as well as other food. She was not a fan of sushi, and was feeling Mexican food. Next to the Mexican burritos and tacos were the sushi, along with wasabi. However, she thought Wasabi was Guacamole. And when I say she had a mouthful of Wasabi, I mean a mouthful. You can only guess what happened next, as Wasabi truly blows your mind!
Wasabi is essential to Japanese food, whether it's sushi or sashimi, wasabi truly takes your taste-buds on an adventure. Not one to boast, but our restaurant in Shoreditch, London is one of few that have original wasabi. However, original wasabi comes with a hefty price tag, which is primarily due to the difficulty in growing it. Hence, this is the reason why Japanese chefs have created an alternative recipe.
Wasabi actually complements sushi, along with soya sauce of course. The purpose is to neutralise the raw fish, thus creating an experience with each bite. Wasabi is complementary with sushi for three reasons. Firstly in Japan, wasabi is like ketchup and plays a real part in daily consumption. Secondly, the taste of wasabi balances raw fish. Thirdly, it erases the smell of sushi like photoshop.
On that note, we’ll leave you with this - please don’t confuse Wasabi for Guacamole!
